Layered Holiday Salad

1       Large Cucumber - thinly sliced
         (washed and sliced with skin)
1/2   Cup Sliced Carrots
1       Pkg. Frozen Peas (Thawed)
2       Green Bell Peppers Sliced in rounds
1        Red Onion or less depending on taste
1 lb.   Bacon (fully cooked)
3 tbs. Dried Parsley
2        Large heads of Iceberg lettuce
8 oz. Shredded Mozzarella cheese
3 oz. Shredded parmesan
2       Cups Premium Mayonnaise
         (Hellmann's is preferred)

Chop lettuce in to 1 inch cubes and separate. In a large casserole pan start to layer ingredients as follows:  Lettuce, peas, then cucumber slices and carrot slices. Then spread a generous layer of Mayo, then top with thin layer of shredded mozzarella cheese. Then repeat layers adding a little dried parsley over each layer.  After layering about 3 times, top with the red onion and bell pepper rounds. then sprinkle the parmesan cheese over the top, cover and refrigerate overnight.   Serve with you holiday dinner.
